Alkaline Bhajis with Homemade Seed Mayonnaise

Oil-free, baked, and served with a simple yet yummy tangy sauce

Alkaline Bhajis


List Of Ingredients


Bhajis

  • 2 sweet onions

  • 1 cup chickpea flour

  • Turmeric, Cumin powder, or curry powder to taste

  • Olive oil

  • Salt and pepper to taste

  • Water or homemade broth if you have

  • Parchment paper

  • 1 teaspoon baking soda



Mayonnaise

  • 1 cup Sunflower seeds

  • 1 Lemon

  • Olive oil

  • Salt and Pepper

  • Black salt (optional for egg flavor)

  • Cilantro

Directions


  1. Peel and slice the onion really thinly. Place the onion in a bowl and fill it up with water and let it sit for about ten minutes to clean all the acidity. Then strain and rinse some more.

  2. Place the sunflower seeds in a bowl and cover them with water. Let it sit for a while. If you do this the night before and really hydrate the seeds better but if not we just add some extra water!

  3. In a blender or with a hand processor, place 1 cup of chickpea per ½ cup of water. Add the baking soda turmeric, salt, pepper, cumin, or curry powder. Add 1 tablespoon of olive oil (optional, you can make it oil-free as well)

  4. Prepare an oven tray with parchment paper and heat up the oven at 180ºC.

  5. Mix the onions with the chickpea flour mixture, use your hands to mix well. You want it thick enough that you can handle it with your hand but not too thick that is doughy, should be a little sticky. If it is too runny, add more flour, and if it's too hard add more water.

  6. On the oven tray (you can add a little olive oil to the paper if you want it crispier) grab some of the mixtures and place it on the trey, you can also use a spoon to measure it better but I like to use my hands for everything, this is how we enter contact with the food and energize it.

  7. Make sure to leave a little room between each bhaji so they don't stick to each other /although if they do, don't worry, just break them). Place in the oven and bake until crispy, about 10/15v minutes. Not too much or they will be hard, remember there is very little oil in them.

  8. Now, to the mayonnaise, in the food processor place the seeds with about half of the water that soaked them in. Add the juice of the lemon, about two three tablespoons of olive oil, salt, pepper, and if you like you can add some cilantro to it. Blend well until you get a nice creamy mixture. I don't like to over process as I like the crunch of the seeds.

  9. Once the bhajis are ready, extract from the oven, place a few on a plate and serve with the mayonnaise. Garnish with cilantro and serve with a lemon wedge.

  10. Enjoy your super-wholesome treat with some salad, curry, or by themselves.
